Sometimes you just have to make something for your kids that they like. I mean it can’t always be about us…so this morning I decided to do just that. My son used to love pancakes! I mean have them every day for breakfast kind of love. But recently he doesn’t want them. I think he just wore them out. So I decided to try something new and make him some maple pancake cupcakes. Yes it is as good as it sounds!
But I also wanted to make it quick. I mean it is breakfast and I do have a very hungry kid on my hands in the morning. So I used dry pancake mix rather than making them from scratch. Maple flavored pancakes baked like a cupcake and layered with your favorite jelly or jam and topped with whipped cream and drizzled in chocolate.
Even my son is in love with these…he already asked me to make them again for breakfast tomorrow!
6 cupcake baking cups
2 cups prepared pancake mix
3 tablespoons maple syrup
3 tablespoons jelly/jam (any flavor)
1 cup whipped cream
2-3 tablespoons chocolate syrup for drizzling
Preheat oven to 350 degrees. Meanwhile prepare 2 cups pancake mix or make from scratch. Mix maple syrup into the prepared pancake batter. Place cupcake baking cups in a cupcake tin and lightly spray with cooking spray. Fill each cupcake cup 3/4 full then top with 1/2 tablespoon of jelly/jam. Cook cupcakes for 20-25 minutes until a toothpick can be inserted and comes out clean. Set aside to cool.
Once cool frost the cupcakes with whipped cream and drizzle with maple syrup. Serve immediately.
